so i woke up at 6am to pop our irish feast into the crock pot since it needs to cook about 12 hours on low. now, at 7:15am the whole apartment smells of win. total and complete win.

in da crock pot - red potatoes, baby carrots, sweet onion, roughly 20-25 cloves of chopped garlic, some chopped cabbage (more to add once everything reduces a bit so i'll have room), 2 bay leaves, a few cups of water and a lean seasoned brisket. mmmmmmmmmmmm :)

my recipe said 10-12 on low, but 5-6 on high because i have to add cabbage for 2-3 hours. lame. :/

luckily coned beef has such a robust taste that the bay leaf can be optional. my recipe also said i could do 5-6 hours on high, but from crock pot experience i've learned that meat cooked on low for a long time makes it so much juicier and flavorful.
